Pinakbet, pakbet or pinak bet is a Filipino vegetable dish that is originated from Ilocos Region. It is a very healthy dish and easy to prepare as you only need to place all the veggies in a pot and boil. Of course pinakbet is incomplete without the bagoong isda or fermented fish. It compliments well with bagnet, letson kawali or fried fish. Serve it while it’s steaming hot and with a freshly steamed rice.
Ingredients: 1 cup water 5 tbsp bagoong sida or fermented fish 1 big red onion 2 tomatoes 3 small sweet potatoes 1 thumb size ginger 8 pcs string beans 4 pcs small bitter gourd 3 small eggplants 8 pcs lady finger 2 green chili (optional)
